Which one should you use?
The choice between forms depends on your relationship with the person you are addressing. Use Wie kann ich Ihnen helfen? or Was kann ich für Sie tun? when addressing customers or strangers. If you are speaking to a friend, a child or someone you know well, use the informal versions: Wie kann ich dir helfen? or Was kann ich für dich tun?
Is there a formal and an informal way to say it?
The default form Wie kann ich Ihnen helfen? is formal. Other formal options include Wie darf ich Ihnen behilflich sein? and the slightly more professional Was kann ich für Sie tun? You can also use the more direct but still polite Kann ich Ihnen helfen? in retail or service contexts. The forms using dir or dich are informal.
How does it change in a sentence?
In the phrase Wie kann ich Ihnen helfen?, the pronoun Ihnen is the dative form of the formal 'Sie', which is required because the verb helfen always takes the dative case. Additionally, the verb helfen is placed at the end of the sentence because the modal verb kann pushes the infinitive to the final position.

- While Wie kann ich Ihnen helfen? is standard, using Wie darf ich Ihnen behilflich sein? is a way to signal an even higher level of deference or luxury service.
- The word helfen shares the same Proto-Germanic root as the English word 'help', making them direct linguistic cousins.
