Which one should you use?
While 愛してる is the literal translation for "I love you," daisuki desu is much more common and natural for a confession of romantic interest in a school or mentorship setting. Other variations include the casual 大好きだよ、先輩 (I really like you, Senpai), the enthusiastic センパイ、大好き！ (I love you, Senpai!) and the deeply emotional 愛してるよ、先輩 (I love you, Senpai). For a formal and polite way to express affection, you can also use 大好きです、先輩.
Is there a formal and an informal way to say it?
The default form 先輩、大好きです is polite and respectful due to the use of desu at the end, making it appropriate for confessing to a senior. More casual or informal options include 大好きだよ、先輩, センパイ、大好き！ and 愛してるよ、先輩. For a respectful manner, one might use 私はセンパイのことが好きです.
